NAMI Restaurant and Bar is the newly minted Japanese restaurant on the 24th level of Shangri-La Hotel, Singapore.

Floor-to-ceiling windows stretch the length of the restaurant, and offers diners a spectacular view of the green paradise that is Orchard Road. The lunchtime brings warm sunrays streaming in and verdant tree canopies. At night, the view transforms into twinkling city lights that pepper the landscape.

NAMI Restaurant and Bar moves away from traditional design elements of a classic Japanese restaurant.

Instead, it presents a bold contemporary aesthetic with a long wooden sushi counter, and a futuristic silver-tiled feature wall.

1. Pan-fried Tuna Head with Chef Akiba’s Signature Sweet Soy Sauce

Seared to perfection, this delicate and much sought-after fatty tuna cheeks is complemented with Chef Akiba’s signature soy sauce — a sweet counterpoint to the fresh fish.

Chef Akiba’s signature sauces are all homemade and crafted to bring out the perfect flavours of the ingredients.

They all contain my special dashi stock for a more complex and unique tasting sauce with strong umami notes,” he says.

There are two ways to enjoy this dish: first with just the tuna and dashi, and second, with a squeeze of the sliced lemon for a citrusy zing to the dish.

The dish that sits before you is a work of art — delicately sliced Japanese Saga A4 Wagyu Beef, artfully arranged in a golden dashi broth.

Made in-house daily, the aromatic dashi stock is presented hot, but not so much as to scald the tongue. Instead, it caresses each slice of beef, enhancing the buttery texture and imbuing the marbled meat with an umami aroma that teases the palate.

The Kyoto vegetables do not pale in comparison having soaked up the dashi as well, and are pleasantly flavourful with each bite.

3. Poached Hiroshima Oysters in Sesame Oil

This dish is an appetiser, but it’s more than capable of holding its own against the richer cuisines served here.

Oysters are meant to be enjoyed in all their natural glory, and the chefs at NAMI Restaurant and Bar understand this well. The oysters are quickly poached for half a minute so that they maintain their tender texture, and only seasoned with light sesame oil.

4. Japanese Saga Wagyu Beef Sirloin With Rice

The dish comes with generous servings of sea urchin, seasonal truffle shavings and rice — premium ingredients brought harmoniously together with Chef Akiba’s dashi stock.

Sink your teeth into the ikura pearls for an extra zing, but don’t forget to return to the highlight of the dish — succulent slices of Saga A4 wagyu beef sirloin.

Paired with the Japanese short-grain rice, this dish elevates the everyday donburi to a new and delightful level.

The broiled silver cod in saikyo miso is prepared to perfection. Its tender flesh flakes effortlessly when broken with a fork. The pearly-white fish is sweet, and the delicious miso flavour engulfs your palate with every bite.

But don’t forget the vegetables — sitting pretty together with the cod, the bright orange sweet potato cubes are infused with lemon.

The light sweetness and citrusy zing of the cubes make for a surprisingly pleasing combination, and are a definite must-try if you’re ordering the cod.
